Cold and rainy today...

It rained almost all day and it was cold...high 50's, so we had to be creative with our day. Henry and I made banana bread on Thursday and it was one of the highlights of both our lives, so I wanted to make something today while we were cooped up. He is able to put all the ingredients in the bowl and he likes to watch everything stir around in the mixer and he was so excited about it on Thursday he looked over to me while we were mixing and he said, "I'm so glad you're here." Then when we were eating our bread he said, "I'm so happy, mommy."

So, we made pineapple carrot bread today but we put the batter in muffin tins and had them as muffins. They turned out pretty good. I used whole wheat flower and all organic ingredients, except the vanilla extract and pineapples (we watched "Food Inc." last night...my grocery bill just shot up about 30% b/c I can't not buy organic now).

Then we painted pumpkins and attempted to carve one. Henry was about 4 inches from Justin the whole time he was trying to carve and he was jabbing the pumpkin with his little blue toddler knife and getting so frustrated that it didn't cut like daddy's knife, so the carving didn't come out like intended (we tried to do a Sponge Bob pumpkin). After all was carved, Henry kept going in the kitchen and ripping off chunks of Sponge Bob's face. It's now just a pumpkin with a giant hole in the center. I'll have to post another picture later.

Then we put salt and cinnamon on the pumpkin seeds and roasted them. Henry ate a couple and declared they were yucky.
